Hi there,
Atm, the OpenDungeons project is using mesh models exported out of blender using the Blend2ogre exporter version 0.6.0.
AFAIK, the latest version of the exporter is the 0.6.0 and is from May 2013:

While development on it has been up until 13.05.2014:

As the latest exporter has still got a few bugs, especially regarding animations, we (The Opendungeons Team) wondered whether it would
better for us to use the bleeding edge version instead.
Has anyone experience in using the latest git version, or does anyone know if the project is still up but only in vacation?
If the project is dead, does someone has advice on what we should use as a format for our models?

One good option would be to help with fixing those issues you mentioned by creating pull requests for blender2OGRE.

Once good thing is that in the link you provided, one can see a PR updated on 2014/10/14 which shows there is still interest.
Oneless good, is that the PR seems accepted since mid-october and MindCalamity didn't merged it. I'm not judging, we all have stuff to deal with.
Of course, a way to make a project live is to join it, but it's a matter of spare-time left and here, I'm unfortunately running out of it for now.

Hence, my rational question about what to do, in such a case. Do you think MindCalamity would agree to create newer snapshots from its exporter as a start,
so we would know whether our issues are still actual ones?

Why do you need a snapshot ? Just download the latest code/version from BitBucket and you should be ready to go.
